Stuffed Jumbo Shells
 1 package of whole wheat jumbo stuffing shells prepared according to package directions.
In a mixing bowl combine the following:
1 Lb of Extra Firm Tofu, mashed
1 1/2 tsp of Sea Salt
1 TBSP  of Onion powder
1 TBSP of Garlic powder
1 TBSP of Oregano
3 TBSP Olive oil
3 TBSP Nutritional Yeast Flakes
Set aside.
Allow cooked shells to cool and stuff with tofu mixture. Pour Pimento Cheese Sauce over shells and bake at 350 degrees for 30 minutes.
Red Pepper Cheese Sauce
1 large Red Pepper
2 TBS Nutritional Yeast Flakes
1 cup of Raw Cashews, rinsed well
1/2 cup of Lemon Juice (optional)
1 1/2 tsp of Sea Salt
2 tsp of Onion Powder
1 tsp of Garlic Powder
1 cup of Water
Blend Well until Smooth.
